Corn Fritters from Rachael Ray

INGREDIENTS

· 2 eggs

· 1/2 cup milk

· 1 cup flour

· 1 teaspoon baking powder

· 3/4 teaspoon salt

· 1 1/2 teaspoons vegetable oil

· Corn, as much as you like – you can also substitute the corn with any vegetable

PREPARATION

Mix all the ingredients together. Fry up the fritters in a pan like you would pancakes.

Serve the fritters on their own or as side dish.

**planning on adding scallions to the corn fritters and trying this with zucchini.
