Margarita Pie


3/4 Cup Margarita Mix
1 Can (14 fl oz) Sweetened Condensed Milk
3 Egg yolks
1 Store-bought graham cracker crumb pie shell

Preheat oven to 400F

In a large bow, whisk together the margarita mix, milk and egg yoks until well blended.
Pour misture into pie shell and bake until set. 7-10 minutes. Chill. Serves 8.

Parmesan Veggie Patties




1/4 Cup Cornmeal mix
1 egg beaten
1/2 cup grated parmesan cheese
2 teaspoons rosemary
4 veggie patties thawed
2 tablespoon extra virgin olive oil

Place cornmeal mix and egg in separate shallow bowls. In another shallow bowl, combine the parmesan cheese, bread crumbs and rosemary. Coat veggie patties with cornmeal mix, dip in egg, then coat with parmesan mixture. In a large skillet, brown veggie patties on both sids in oil. Cook, uncovered un until heated through.

Veggie Burger "Steaks" with Mushroom Sauce



2 cups bread crumbs
1 lb. ground veggie crumbles
1 tablespoon chopped onion
1/4 cup water
2 tablespoons vegetable oil
2 tablespoons chopped parsley
salt and pepper
1 (10.5 oz.) can condensed cream of mushroom soup
1 cup milk

Combine bread crumbs, veggie crumbles, onion, water, parsley, vegetable oil, salt and pepper and form into flat patties. Brown on both sides in oil. Mix soup and milk in a separate saucepan and heat throughly. Pour soup mixture over patties and simmer for 5 minutes.
